Reading a piece on substituting meat in your diet Stalker was sure that mushroom would feature.
The article highlighted the health benefits of less meat thus:
“We all know it’s better for the planet, our wallets and our waistlines, but this week there was yet another reason to consider switching to a plant-based diet. A study from the US has found that vegetarians had a 12 per cent lower risk of developing cancer than meat eaters, while a vegan diet reduced the risk of cancer by about a quarter.”
Then the mushroom substitute bit came: ““There are many plant-based options which offer that hearty, ‘meaty’ bite, including marinated and grilled tofu or tempeh, seitan, mushrooms — particularly portobello or shiitake — and jackfruit for pulled ‘pork’ style dishes. Using herbs, spices, marinades and umami-rich ingredients such as soy sauce or miso can help recreate rich meaty flavours.”
