Mushroom Butcher is his weekend- only food truck parked outside a converted retail unit where he and his other half cultivate a dozen or so delicate short-shelf life mushroom varieties rarely seen in Ireland.
Staples have included King Oyster schnitzel, Mushroom XO sauce with polenta chips, and a vegan bánh mi. The mushrooms are sold fresh and appear on menus at some of the country’s finest restaurants.
